Our Land & Its History

Around Agios Vasileios lie cave-dwelling sites that reveal human presence as early as prehistoric times. The earliest traces of settlements, predating the rise of the Mycenaean world, highlight the depth of our history and the primordial bond between people and the land. Within a breath’s distance stand ancient Corinth, Nemea, and Cleonae — centers of culture and religious festivals dedicated to Dionysus. The classical era is etched into the landscape, infusing our terroir with vitality and heritage. Roman influence endures through remnants of the Hadrianic aqueduct and mosaics found in old rural villas in Cleonae. Here, the roots of the vines quite literally pierce the stones of the ancient city, drawing the strength of time from the earth itself.

Agios Vasileios is a semi-mountainous village with rocky, predominantly limestone soils, natural drainage due to the sloping terrain, and strong day–night temperature variations. The microclimate is decisively shaped by three gulfs — the Corinthian, the Saronic, and the Argolic — as well as by three mountains: Mount Ziria (2,374 meters), from which cool air masses descend at night to refresh the vineyards; the mountain on which ancient Corinth stands; and Nifitsa, which blocks warm air currents, offering freshness, aromatic finesse, and natural balance.

We select our varieties carefully, guided by the strength and tradition of the land. Part of our grapes comes from vineyards in ancient Mantineia, a symbolic birthplace of Moschofilero, while others come from the mountainous slopes of Corinthia — on Mount Kyllini, where according to myth the god Hermes was born — regions defined by altitude, cool breezes, and expressive character.

Boubas Winery was founded in 1996 on the fertile land of Corinthia, with a mission to craft wines that highlight the authenticity of Greek varietal identity and the unique terroir of the region. The Boubas family cultivates its privately owned vineyards with respect for nature and the environment, applying sustainable viticultural practices that blend tradition with innovation.


Today, the management of approximately 70 acres of vineyards focuses on Greek varieties such as Moschofilero, Roditis, Agiorgitiko, Assyrtiko, and Malagousia. Each variety reflects the distinct character of the Corinthian terroir, offering wines with intensity, freshness, and typicity. Boubas Winery has been honored with numerous awards, recognizing the quality, authenticity, and passion invested in every bottle.


Since 2001, the second generation of the family, led by Christos Boubas, has brought scientific expertise and modern strategies to the winery, with studies in food technology, oenology, business administration, and marketing. This new approach enhances the quality, extroversion, and evolution of our wines, while preserving authenticity and consistency.


Winemaking takes place entirely in our modern, privately owned facilities, where we apply techniques such as cold maceration and fermentation with native yeasts in stainless steel tanks and barrels. These methods ensure the expression of each variety’s natural identity and the true character of the terroir. Our responsibility toward the environment and the future is at the heart of every decision we make. We feel accountable for the land and the resources inherited from our ancestors, and it is our duty to manage them with respect, safeguarding what must be passed on to the generations to come. This is not merely an ethical choice; it is the essence of our philosophy.


Our goal is to create wines that are genuinely authentic—wines that express not only the character of the variety or the soil, but also our own truth. To bridge the past with the future in a way that honors our roots and gives meaning to our vision. Every bottle that leaves our cellar is not just a product; it is part of an ongoing journey that we wish to share with those who seek something real in their glass.

Winemaking

Winemaking at Boubas Winery is a process that blends knowledge, observation, and respect for the natural course of the fruit. All our wines are produced exclusively from grapes grown in our privately owned vineyards, as well as from selected vineyard sites across the Peloponnese.

From harvest to bottling, and from bottling to maturation, every step is carried out with precision and balance, without excess. For selected labels, we apply cold maceration prior to fermentation and/or batonnage, allowing each variety’s aromatic character to emerge naturally.

Alcoholic fermentation takes place in stainless steel tanks under strict temperature control, preserving freshness and purity of profile. Selected white and red wines mature in French oak barrels, gaining depth, harmony, and aging potential.

In many of our vinifications, we use indigenous yeasts, giving the wines a unique character and greater complexity with minimal intervention. We do not believe in standardization but in expressing each vintage with authenticity and technical consistency.

We apply strict quality controls at every step of production: from vine inspection and constant fermentation monitoring to tasting sessions and evaluations before and after bottling.


Every batch is recorded and tracked, ensuring traceability, consistency, and reliability. We collaborate with experienced oenologists, assess our wines at every phase, and refine our processes with a focus on stable quality, safety, and product evolution.
